Did a little messing around in the shop tonight, learning about how the ML10 lathe works, as I am a complete newb with this. Learning a ton quite quickly though!

I went through the misc parts which came with the unit. Unfortunately, it seems as though the 4 jaw chuck, which was included with the lathe, is missing its backing plate. Is the chuck still usable (ie, would I be able to source a backing plate for it)?

Yes, they are available. ML10 has a standard spindle thread – I think, but you better check that!

OR you could make your own – if you have a faceplate. Lots of experience in plain turning and internal thread cutting. Setting up a pitch circle diameter and drilling and tapping the mounting holes.

They aren’t specifically machined per the chuck, when they are made? Meaning I could get a replacement somewhere?

They come as a blank of various diameters to suit different chucks, ready machined and thread to fit on the lathes spindle. Then you machine it up to fit your chuck.
