Automatic Drain Cocks

Can anyone explain to me how automatic drain cocks work.

As steam has a higher velocity than water why does it not get pushed shut like a clack valve before the water is expelled? Or even pushed shut by the water only expelling a small amount before the water pressure shuts it.
