      Does anyone know of any instructions on setting the valve for a Southworth 3 inch vertical pump, just guessing at the moment.

        You mean a weir type feed water pump ? Noel.

            Firstly the southworth series have no resemblance to the Weir product.  End of pedant outbreak.

            It is easiest to start with the two stops set close to each other.  The pump should then work, but will not travel full stroke.  You can then progressively move each stop out a bit and try again.  You will reach a point where the then stalls at one end, so put that stop back in a bit.  The settings tend to depend a bit on stroke speed, working pressure and motive fluid, so fine tune under steam if that is the intention, but rough set on air for convenience.
