MPT and UST Taper threads

Can any of our members particularly those in the US enlighten me to the difference between MPT and UST taper pipe threads specifically 1/4×40. I was all set to order a fitting from P M Research with the MPT Model Pipe Taper thread that I have used before and now see an option for UST
