Similar knobs are used in electronic equipment for potentiometers and rotary switches, most are for 1/4 inch diameter shafts, and these are readily available as spares and for home constructors of electronic equipment. Other sizes are less common. Try googling "potentiometer knob" or "RS components"

Do a google search for chicken head knobs. That will give you the closest modern equivalent

A picture and dimensions of the shaft it goes on would be useful. As Rod said, 1/4" is easy but a lot of industrial switches use odd shafts.

Easy enough to 3D print one, and straightforward to model.

I have seen them on ebay when I was looking for a knob for a VFD speed control, there are hundreds of variations.
