For an organic material that swells and shrinks with temperature and humidity, overly critical tolerances seem a bit OTT.

I can assure you the tolerance was relevant for the job. 0.05mm was only applied where it needed to be.

As you observe wood is not a completely stable medium, but the top of this table is constructed as a sandwich on aluminium honeycomb core. Veneer/mdf/hexalite/mdf/veneer were bonded under pressure then passed through a full width sanding and thicknessing machine. The 50mm or so perimeter of the top is actually a hardwood frame so the critical areas where thickness differences would be noticeable are subject to ambient conditions, but are sealed by lacquer. As long as both thicknesses shrink or swell at the same rate the actual dimension does not matter.
