I'm looking for recommendations for a book or possibly DVD illustrating how to go about repairing or creating from scratch replacement aluminium body panels for cars. Any steers gratefully received.

I watched the several video trailers on the site below some years ago - just for a basic idea of how it's done. the guy does sell videos and books and equipment but how he compares with other folk I'm not in a position to comment.

+1 for the Lazze link. Search youTube for Lazzemetalshaping. Good stuff.
Also try Ron Covell, at covell.biz. Covell sells DVDs but there is also lots of information in his youTube videos.
I bought several pieces of equipment as a result of seeing the videos of both gentlemen (not from them, and not at the prices they suggest, either.)
